Pan-Seared Mackerel

Mackerel is a versatile ingredient, it's tasty and healthy; has a high content of good fats, especially Omega 3. Easy to prepare and able to give great flavour to any dish. This delicious Mackerel can be served with a side dish of your choice or eaten on its own!

If you are among those who do not like it because of its strong and decisive taste, get ready to change your mind with this recipe of pan fried mackerel! The seasoning used is made of green bell peppers, rosemary, thyme, coriander, garlic, onions and all spice. The lime juice it contains would soften the flavour, while enhancing the Mediterranean character. Add some cherry tomatoes to the pan whiles frying the fish to infuse it with the flavours and juices for a very sumptuous meal!


Ingredients:

2 Mackerel fillets

Salt to taste

2 tbs Olive Oil

100g Cherry tomatoes

1/2 Lemon

200g Cherry tomatoes (optional)

To Prepare:

1. Marinate mackerel with Eva’s Kitchen all purpose seasoning, salt and lemon juice or any spice mix of your choice. Eva’s Kitchen all purpose seasoning is a blend of fresh herbs and spices, preserved in lime juice.



2. Drizzle oil in pan. Sear on each side for 2-3 minutes. Add cherry tomatoes whiles Mackerel is searing.

3. It should be lightly browned and crispy on the outside but moist on the inside. Serve with your favourite side and Enjoy!
